Seven Weeks In and the Best is Yet to Come

Hi everyone,

It’s hard to believe, but it’s already been 7 weeks since we opened our doors to you. Honestly, I’m still in awe of the incredible response we’ve received. From the new friendships we’ve made to the unforgettable stories we’ve shared, this bar has come to life in ways I never imagined. What started as a distant dream has come true in the blink of an eye.

It’s one thing to dream of opening a bar and have an idea in your head, but it’s a whole other challenge to actually bring it to life. Just two weeks before we opened, Alex, Beau, and I were sitting in my kitchen surrounded by bottles, spices, fruits, and acids, scrambling to finalize our menu. We had just four days until the print deadline—and only one pan between us. No fancy equipment, no gadgets—just a lot of pressure and one goal: to make it taste amazing. Somehow, we pulled it off, and the menu you enjoy today was created in those four days.

The next challenge was assembling the team. Two weeks before opening, with the team starting just the week before and the bar still under construction, we found Steven, Eliott, and Bayley—each of them bringing a genuine kindness, a love for people, and a wonderful lack of ego. Once the team was in place, the jackets came in, and training began. I’ve never seen a group push themselves so hard to get up to speed so quickly.

Then, in the blink of an eye, you all came in—popping champagne, raising your martinis, sipping bourbon, and smashing Vice & Vanities like it was going out of fashion. It’s been an absolute blast, and we have so much more in store for you this year. We’re bringing in some of your favorite faces and bars from around the world to create amazing drinks just for you.

On a personal note, I truly believe that hospitality is about kindness, and that’s where it will always come from with us. So, from the bottom of my heart, thank you all for your incredible support in these first seven weeks. We couldn’t have done it without you.
